Yes, the fruit is safe to eat. The problem is the pit. As for feeding a dog the pit, I suspect the problem wouldn't be the pet parent, but the wily pooch. Some dogs are more prone than others to devouring anything they happen to come across. I've known and owned dogs who've grabbed and eaten anything from a holiday ham on the kitchen counter to the contents of a trash can to their own rope toys, often followed by great medical expense. If a dog does snatch an apricot and eat it, pit and all, it's time to call the vet.
